Fit Friday...

We made it to Friday...this is cause for celebration. I'm mentally celebrating as you're reading this.

I'm in a bit of a fast/healthy food slump. To save time during the week for the last few weeks we've been eating Lean Cuisines and Smart Ones for dinner. I'm bored.

Do you cook during the week? Have any tasty, healthy meals I could cook up next week that take 30 or less minutes to prepare?

Totally off the subject, I'm listening to Snow Patrol radio on Pandora right now. John calls this my "Melancholy Mary" music. I'm not exactly melancholy right now but I am really really ready for the weekend to get started.

I have been in the same slump. I hope other people are not so I can get some ideas too. Next week can you talk about weight loss plateaus? I'm at one and it's very frustrating.

Do you have a slowcooker? I find it really helpful on my lazy days. Just pop a whole chicken in there and let it cook all day while you are at work :)

I find myself struggling for time to make a good meal these days and it sucks!

I do a lot of casseroles on the weekend and then freeze. Which is not the best idea because they usually have 1) some kind of pasta or potato, and 2) have about 85 lbs of cheese. I am doing a lean beef green chili stew in the slow cooker right now. I will let you know how it turns out.

I'm a huge fan of stir fries - cut up a whole bunch of veggies, cook up some meat/rice/noodles, throw it all together and it's a quick & delicious meal!
